Josh Dorcak, an accomplished chef, was born and raised in Cupertino, California. Upon completing high school, he attended the esteemed California Culinary Academy in San Francisco, where he was introduced to the world of fine dining. He gained valuable experience while working in San Francisco, Oakland, and Napa before making his way to Ashland, where he joined the celebrated Amuse restaurant.
Josh's passion for gastronomy led him to believe that Southern Oregon has untapped potential, and his journey to Tokyo in 2016 provided him with the inspiration and business model he needed to start his own restaurant. In 2017, Josh founded MAS in the basement of a bakery in downtown Ashland. The following year, he secured a brick-and-mortar location in the same area, and the restaurant has since evolved into one of the top-rated dining establishments in the country.
Josh's culinary prowess earned him recognition, and he was a finalist in the 2023 James Beard Awards for Best Chef in the Pacific Northwest. He is supported by his wife Lindsey, who has documented the restaurant's growth through her photography. They reside in Ashland with their three sons, Caswell, Blaine, and Owen.
Former Army Blackhawk Pilot turned wine professional, Joseph Shaughnessy is a Certified Sommelier, Champagne Master, French Wine Scholar and has achieved the Wine Spirit Education Trust’s Diploma, their highest certification. He has a true passion for the beverage industry, and in six years he has been in all aspects of the trade. He is a wine consultant, educator and winemaker for his own label Cru Siskiyou. He is currently pursuing his Advanced Sommelier Certification.
