MÄS, an intimate, chef-led dining experience in the small town of Ashland in southern Oregon, is the project of four-time James Beard-nominated Chef Josh Dorcak. The restaurant is defined by Dorcak’s disciplined, Japanese-influenced approach to ingredients, where the aim is to employ process and technique to “give each ingredient its own voice.”
With one nightly seating (limited to 12) and the only service staff being Chef Josh himself, MÄS functions more like a Japanese counter than a Western fine-dining restaurant. In 2022, MÄS was named one of the 50 Best Restaurants in the Country by The New York Times, and it has put Southern Oregon on the culinary map, drawing food lovers from across the country.
