MÄS is located in Oregon, USA, led by Joshua Dorcak. It started in the form of a pop-up meal at a communal dining table, and was officially opened in the summer of 2018. Using the ingredients collected in the vicinity of the Rogue Valley in Southern Oregon, they serve a course menu influenced by Japanese and local food culture.
There are more than 40 wild food ingredients, such as sunflower seeds, Madron tree berries, shells, and chrysanthemums. It presents gifts given by nature through cooking, such as putting a flower of carrot in baby steamed carrots, seasoning herring with salted herring and nasturtium flowers in the summer, or putting kelp puree on a grilled pork potato.
