Ashland is five winding hours south of Portland, in the heart of the Cascade Mountains. It’s a small town, and MÄS is an even smaller restaurant. But it’s ambitious nonetheless. Chef Josh Dorcak forages the coast for the tasting menu at the 12-seat restaurant, tucked in an alley off Main Street. He calls his food “Cascadian,” and it can include foraged sea lettuce or Pacific Rogue wagyu with wild onion, morel, and rutabaga.
